Whole Food Quesedillas

2 100% Whole Wheat Tortillas
2 Tbsp Hummus
1/2 avocado
10-12 mushrooms, washed and sliced
1/4 c. diced bell peppers
3 tbsp green onions
1 c. baby spinach (measure loose)
2 tsp Nutritional Yeast flakes
Vegan, no fat, no cal Ranch

Saute mushrooms, bell peppers and onions in a dry skillet, add a little water if you need to.  Drain and set aside.   Place 1 tortilla in heated non stick skillet, spread with 1/2 of hummus, top with 1/2 of sauteed veggies, sprinkle with Nutritional Yeast flakes, then spinach, avocado and rest of sauteed veggies.  Spread remaining 1/2 of hummus on second tortilla, place hummus down on top of quesedilla.  Press down firmly.  Heat till crispy and golden, flip and heat other side till crispy and golden.  cut in half, place on plate and serve with Ranch.


We had these for dinner tonight and I loved them!  Brian said on a scale to 1-10 they were a 6 or 7, but hes picky about his food flavors!  LOL 

Update: 1/7/12  I had one of these again tonight for supper, minus the avocado and yeast flakes.  So I took pictures this time! :)
